Fresh Cucumber Lime Salsa

Our garden is starting to burst with flavor! Our tomatoes are finally starting to turn red. With the wet weather we have had in our area this summer, they have been late. We are picking our first cucumbers, and have had a few bell peppers, too.

I wanted to share my favorite fresh salsa recipe with you today! It is SO quick, easy, and YUMMY!!! you are going to LOVE this salsa. It is great over rice, on meat, or just with tortilla chips! It is great, because you can use any or all of the basic ingredients if you want. If you grow a garden, then it makes this salsa really inexpensive!

Basic Ingredients:
  • Tomatoes
  • 1-2 Green Pepper
  • 1 Red Onion (or you can use yellow)
  • 1 Cucumber
  • 1 Can of Corn, drained
  • 1 Can of Black Beans, rinsed and drained
  • Cilantro
  • 2-3 teaspoons Salt
  • 2-3 teaspoons Garlic
  • Juice from 1-2 Limes
  1. Chop all vegetables to bite sized pieces and place in a large bowl. Add the corn and beans.
  2. Then, mix the salt, garlic, and lime together.  I like mine with a lot of lime flavor, so I use 2 limes when I make this.
  3. Pour the lime juice mixture over the veggies. Stir it until it is mixed in. You can add more lime, garlic, and salt if you need to.
  4. Enjoy!

Note: I have also made this using a bottle of Italian salad dressing instead of the lime/garlic/salt. It is really good, too!
